Growing Organic Mushrooms in Canada

Organic mushrooms Canada are considered a superfood and are packed with nutrients. They are high in B and D vitamins, low in calories and fat and have a good amount of protein. They also contain a number of antioxidants that help reduce the risk of heart disease, cancer, inflammation and other illnesses.

Mushroom producers are working hard to innovate with new mixes, blends and packs and experimenting with value-added items such as the mushroom burger. They are also working to make mushrooms more sustainable by utilizing stems and other parts of the crop.

Organic mushroom production has increased in recent years and has even exceeded conventional specialty mushroom volume during four of the 10 marketing years between 2012/13 and 2021/22. But that’s no small feat when labor is tight and many farms were impacted by the Coronavirus pandemic.

One of the leading organic mushroom growers in Canada is Leamington, Ont-based Highline Produce Limited which has nine growing facilities across Western Canada. Last fall, the company acquired All Seasons Mushrooms and became the largest operator in the Canadian mushroom industry.

The purchase added more than 19 million pounds of annual sales to Highline’s mushroom business. All Seasons specializes in gourmet specialty mushrooms including enoki, shiitake and oyster.

Mercy said he wants to take the next step in his mushroom experiment by working with students from nearby Selkirk College in Kaslo, B.C., to inoculate rotting logs from the local forest with his company’s mushroom spawn. He hopes the project will spark a conversation about food security in his community.
